Cucumber Peach Salsa

After a few years of eating healthier in general, I’m happy to say that I crave fruits and veggies on the same basis as I do desserts and pasta. However, there are just those days where eating a bag of raw carrots at your desk at work is so blah, and when the overly-ripe banana in your purse is, well, mush. I’ve decided to get my daily fill of fruits and veggies by incorporating them into my foods rather than an afterthought, a.k.a. savoring the sweet. I borrowed a fantasic recipe from Women’s Health Magazine for this Cucumber-Peach Salsa, a flavor combination that tastes just as interesting as it sounds. I scooped up gigantic portions of this concoction with multi-grain tortilla chips with zero guilt and 100% of my fruit and veggie quota.
