Arancini di Riso (Fried Risotto)

Risotto has become a staple in our weekly meals. It’s a bit time consuming to make– but after you’ve made it a few times, it’s easier to walk away from the stove and get some things done while it’s slowing simmering to creamy perfection. What’s not so easy it mixing it up to make it different and refreshing. When I saw this Giada de Laurentiis recipe, I jumped on the chance to make something new with leftover risotto. The best part is easily the gorgonzola cheese stuffed in the middle– a small addition that adds major flavor and even more creaminess. Yum!
