Nonna Luna’s Rice

One perk of being able to spend your days as you please is catching up on all of the shows that collect in my DVR and never seem to get watched (i.e. cooking shows) I’m mildly obsessed with Giada de Laurentiis, who never fails to cook with all of my favorite ingredients: loads of cheese, espresso, veggies and seafood. My boyfriend and I have made risotto countless times as a cheap, filling meal and thought this recipe adapted from one by Giada’s grandmother (Nonna Luna) would be a great take on a classic weeknight staple.
