Fried Eggplant Sandwiches

Moving doesn’t really accommodate the kind of time it takes to craft a decent meal as boxes have littered my new (old) stove for the past few days. Pizza, coffee and greasy burgers pretty much became a staple; so I was definitely excited to be able to turn on the stove and and actually cook something for my boyfriend and I in a pan. I thought that this fried eggplant sandwich was the perfect segue from the fast food back to the healthier food I usually like to cook. I was lucky to stumble across the recipe in this month’s issue of Real Simple magazine that miraculously survived the move despite the very unorganized process.

The best part: I was able to use fresh basil from my new garden. Let’s keep our fingers crossed that my tomato plant survives and I’ll be able to have some home-grown tomatoes by next time  I make this recipe.
