Blueberry Muffins with Lemon Glaze

Nothing says sunny weather more than the delicious combo that is blueberry and lemon, a combination I absolutely love. (As referenced here) When I first turned 21, Blueberry-vodka lemonades were my go-to choice, and even some of my guy friends started to order the drink. Drinking the blue-lemony Kool Aid flavor was always paired with fond childhood memories.

On a lazy day, I dug out some of my boyfriend’s favorite Jiffy blueberry muffin mix and decided to jazz it up a little with some lemon glaze. The nice thing about glaze is that you can mix powdered sugar with just about anything (in this case, a few tablespoons of lemon juice and a little zest for pretty texture) and it will make a nice glaze. See also: Strawberry Glaze. If it’s not looking glossy, add a little water (but not too much, or it will be runny).

    Oh man, I have fallen in love with your glazes before (see strawberry frosting?) and this one sounds like it wouldn’t let me down either.
